Biryani

Biryani is a flavorful rice and meat dish popular in South Asia.

  1. Rinse the rice thoroughly and soak for 20–30 minutes.
  2. Wash the chicken and marinate with yogurt, salt, and biryani masala. Let it rest for 30 minutes.
  3. Heat oil in a pan and fry potatoes until golden brown. Set aside.
  4. In the same oil, fry onions until golden and crisp. Set aside some for garnishing.
  5. Add marinated chicken to the pan and cook until it's 80% done.
  6. In a separate pot, boil the soaked rice until it's 70% cooked, then drain the water.
  7. In a deep pan, layer rice over the chicken. Add fried potatoes, onions, coriander, and mint.
  8. Cover tightly and cook on low heat (dum) for 15–20 minutes.
  9. Turn off the heat and let it rest for 10 minutes before serving.
